What do you put in your homemade burgers?

I love eating homemade cheeseburgers but am out of ideas on what to put in the actual burger. Normally mix the meat with an egg, some shallots and some mixed herbs. But there's more to burgers than that isn't there?

An in the bun melted compté (am in France) and a slice of tomato with ketchup.

Please inspire me.

Grated courgette is nice, and chopped feta. Some minced onion and garlic, and chopped fresh parsley. And NEVER an egg, it goes too wet I find.

Jamie Oliver's botham burger is very hard to beat. Minced beef, egg, breadcrumbs, cumin, coriander, red onion and dijon mustard. I make roughly double the number he suggests from that quantity of meat though!

I also do a rather nice pork burger with apricot and mint and a spicy lamb one too.

I prefer them to not be 100% meat (and the meat is always from the butchers here) - they are lighter and more digestible imho.
