Chorizo is truly magical

Doesn't it make anything taste good? Just had courgettes and chorizo pan fried and then covered in melted mozzarella. It was feckin lush

Mmmm... that sounds yummy Skinny. I agree chorizo is a fantastic flavour booster. I always have some in the fridge for when I want to transform everyday dishes into something really special.

Chorizo is my go-to ingredient when I want to make something vegetarian without upsetting my husband! (Make the meal; add chorizo at the end).

Try cooking chorizo (the fresh one) fried in a small amount of olive oil and then add 3-4 tb of runny honey.

I forgot to say that then you have to keep frying for 5 more mins or so.

Am going to try chorizo and honey.

It's the kind of thing I get the urge for, eat loads and then feel satisfied.
Am going through an artichoke in a jar of oil phase at the moment.

Mmm yes. I have been doing big roast veg and chorizo things lately, because the chorizo juices are just so good at flavouring the whole lot. I do courgette, peppers, fennel, red onion, and whole garlic cloves mixed with fennel seeds, chilli, oregano and chopped chorizo. Yum. You can mix it into pasta with tomato sauce and feta to great effect.

It's also brilliant added to most chicken dishes, or with seafood. It isn't cheap though, is it?! Shock

Dry fry chorizo cubes, add a tin of rinsed drained chick peas, heat through, add a jar of puttanesca pasta sauce. Serve with slices of fresh mozzarella on top and crusty bread.....

I love stews with chorizo, like fish or pork, and the oil oozes out - delicious. Loving artichokes in a jar too WowOoo....was a bit gutted when our local Aldi stopped stocking them! (DP and I call them jartichokes....does that make me really sad?!)

Excellent chorizo inspiration, thanks all! I'd better be careful in case I eat too much and go off it! My fav is from lidl. Proper long traditional looking sausage....

I love chorizo. I made a tasty red lentil stew with it in the SC.

Chorizo and honey sounds lush. Going to try that.

I made a Spanish potato dish- pots, chorizo, red pepper, onion, toms- and it was so good- then I my fitness palled it- chorizo is not a friend to keeping calories down!!

I adapted it from this recipe.

Because I use the slow cooker I use around 500-600ml of stock so that its thick. I also have to blend it (for DP Hmm ) so when its cooked I fish some chorizo out for him before blending.

I fry the chorizo and onions (and garlic if using, but I dont) in a little oil first, add all the other things to the slow cooker.

Once the onions are soft and the chorizo cooked a little I add those in and turn it on high for 4-6 hours.

Chorizo is my favourite ingredient at the moment. Especially with eggs. They shouldn't go but they do.

I don't find it expensive, I am boring and get it at the supermarket 2 for £4. I find one does 3 meals for dh and I with no other meat, so its a cheap and yummy way of adding a bit of protein.

I make this with mussels and a glug of white wine. Got he recipe from the fish stall man in morrisons! Really nice recipe. Sometimes I add celery to it too.

Can you eat it when outside looks like it has salami type mould on it?

Am planning chorizo and courgette pasta but DH saying I shouldn't eat it as pregnant and to buy a fresh one.

I often roast new pots, sauté red onion and peppers and chorizo, pour over the potatoes and top with poached egg. One of dh's fave dinners.

Hugh Fearnley-Whittingstall has a recipe for making your own - it basically ends up like lumps rather than in a big sausage shape but it is AMAZING!
