Any suggestions for a quick and easy birthday cake?

DD will be 3 on Friday. We're going away tomorrow for two nights and I was planning a birthday lunch with party food, cake etc for some of her friends next week since it would be impractical to do on the day itself. However, she made it clear yesterday that she expects(!) a cake on her birthday which is fair enough, but I'm going to be seriously pushed for time to actually do anything about it before we set off tomorrow.

So, can anyone suggest something quick and brilliant that I can make with my limited time (and skills)? Would cup cakes be the easiest thing? We make them quite a lot so it wouldn't exactly be very different or special.

All suggestions will be gratefully received, thank you Smile

Buy a couple of ready made Victoria sponges,sandwich them and ice them yourself and decorate with smarties, sweets and candles.3 year olds won't mind it not being homemade,it's all about the icing!
