Mini apple pie filling - quantities?

My niece (6) is desperate to make some heart shaped apple pies (mini ones) for her little sister who is in hospital at the moment. I promised to make them with her tonight so she can take them in tomorrow but I'm struggling to find a recipe that is clear and has quantities rather than just 'cups'.

I've got apples, sugar, ready to roll pastry (lazy) and some heart shaped cutters.

As far as I can tell, I pop the chopped/peeled apples in a pan with sugar and butter and a bit of cinnamon, then spoon it onto a pastry heart, put another pastry heart on top, and cook.

Is that right? And how much should I cook - how many apples, how much sugar, etc? Looking to make about six hearts...
