I love pasta and pesto, particularly the red variety. I usually buy Aldi specially selected pesto rosso but many people on here say it's tastier homemade. Please share your recipes.

Dead dead easy.
2 large handfuls basil leaves
I small h'full pine nuts (toasted in a dry frying pan for a minute or two)
Half to one clove garlic.
Blitz in a blender.
Scrape out into bowl
Add one handful hard mature cheese (i don't use Parmesan as I'm veggie)
Add ev olive oil.
(Salt and pepper to taste)
Sooo much better than shop bought Wink

If you happen to have wild garlic growing near you, make it with that. It freezes well and you'll find recipes by searching for 'wild garlic pesto' (I think the one I used was from River Cottage).

Do taste it as you go as it will need adjusting.

I once made it with stinging nettles. (Blanched first to get rid of stings)

It's ok (not as good as basil but better than coriander IMO ) - and it's free!

Homemade really is much tastier than shop bought, I've never tried making a red version though, watching with interest!

in blender: sundried tomatoes, garlic, cheese (pecorino or parmesan), olive oil, crushed red chillies, pine nuts, 1 or 2 fresh basil leaves
