BBC Good Food Maple-mustard pulled pork

Am about to make this this weekend. The recipe says: 'sit on a rack in a roasting tin. Roast for six hours'. My question is should the meat be covered? I was thinking of doing it on a deep oven tray sat on a rack but will it dry the meat out if it is uncovered?

Thanks for help in advance (of ruining dinner, which would be a shame as it sounds yum.)
