Yummy cornmeal/polenta recipes without dairy

Have bought some coarse cornmeal for ds, recipe on back uses loads of cheese which he can't have. Ive never cooked or even eaten the stuff before but would love some child friendly yummy ideas for it (he is also gluten free by the way) Thank you oh cooking guru's of MN.

hiya!!

"turned cornmeal" is quite nice. fry onions and tomatoes in a frying pan, add some cornmeal over it, about a cup. slowly add water, about 1/2 cup. keep stiring/turning untill the water disapeared and cornmeal is fluffy.

i made cornbread which is jamaican cross between bread and cake, my kids love it lovely warm or cold. found a link for the recipe

you need to use flour for cornbread, carol so not sure about gluten unless raggedyanna buys gluten free.

I'm at work now but have a great reccipe for it. Involves vegetable ssock and you can add cheese for flavour or leave it out. You then chargrill it for best results (we do it on the barbeque) but could do it in a fryapn if you wanted.
