Making quiche - only have 2 eggs. Help.

I want to make a quiche. I have 2 eggs, cream and ricotta.

If I make a small quiche using these will it set propery? The recipes I have all use loads of eggs and double cream.

I also have bacon, onions and various other veg etc.

Should do. Just go easy on the cream as too much liquid will stop it setting. If you whisk the eggs and ricotta together, chop up bacon and onions and fry, then stir them into the mix and pour it all into a blind-baked pastry case, it'll probably be delicious.

Or borrow two eggs from next door. that's what neighbours are for!
