Moroccan roast chicken

Ok so I have a chicken marinating in garlic, ras el hanout and oil rub. Going to roast it for tea - anyone have any good ideas for spicing up cous cous? A also planning a side dish of chick pea/tomato stew style thing.

Sounds lovely! I like cous cous with lots of finely chopped fresh herbs like mint, coriander and parsley, some chopped sun dried tomatoes and olives, the juice of a lemon and a glug of olive oil.

That sounds lovely ruffello, kind of like tabbouleh? I will definitely do that next time.

We just had plain cous cous but with a nice chickpea, tomato and carrot stew with lots of tasty spices in. The chicken was great and I made a rice dish with the leftovers last night using paella rice and some onions, tomatoes and peppers.
