Morning
DH brought home a box of leftovers at the end of term, including 24 eggs!

Obviously omelettes etc are on the cards, but does anyone have any other recipes which use lots of eggs, I hate throwing things away!

Carbonara would use a few yolks and you can freeze the whites for meringues.

You could also bake a couple of Victoria sponges and freeze.

I make a mahoooosive sponge cake that uses 8! It goes;

Per layer ;

200g self raising
200g caster sugar
200g butter
4 eggs

Oven, 190, 20mins

Whipping cream and strawberry jam to fill with icing sugar dusting the top.

Absolutely delicious, and uses 8 eggs !!

When we have an egg glut I separate the eggs and make loads of custard and meringues. I've also frozen whisked up raw eggs and used them in cakes and omlettes at a later date.

You've just reminded me, CRbear, lemon curd is a great one for using eggs - smear it into an egg rich sponge cake à la chaos for a yummy lemon cake.

My mum used to make a massive Creme caramel at Christmas time when we invariably did lots of entertaining, it seemed to keep well in the fridge.

Then with the whites she'd make pavlova - but make sure you use a recipe with cornflour and vinegar in so it's all gorgeously gooey and like marshmallow on the inside rather than being just dry and powdery meringue. biased? Me? Yes Grin

Or you could actually make marshmallows with the whites too if you have some left over.

Make a couple of quiches, a couple of cakes and have a fry up for breakfast/eggs on toast for tea. You'll be sorted.

We use about 6 eggs a day in this house just on breakfasts and lunches, without baking stuff like quiches/cakes! 24 eggs is the level I start panicking at and going out to top up... Grin

DSD did have the idea of putting some of the eggs on top of the Easter cake, but she decided on mini eggs instead!

Tarte au citron? My recipe uses 9 eggs, 390g sugar and zest of juice of 5 lemons and 300 ml cream.

Quiche, making pastry with egg yolk both sweet with icing sugar and plain, if you make extra pastry you can freeze it.
