when to bake

Im making a carrot cake for sunday. If i make it today will it be stale? Shall i wait til tomorrow? Never made a cake before (successfully)

Absolutely- the decorations will be fine. I would bake it in the morning then ice it in the evening when it's really properly cold and firmed up. Good luck!

It depends on the recipe. The Mich Turner one is fab, had rum in it and a shelf life of two weeks, I find it's better after a day or two.

If its got cream cheese frosting it needs to be kept in the fridge though.

Ooh no im not a fan of alcohol in food stuffs Grin im definatly doing creamcheese on it though i hope this works and doesnt look too bad! Ive made carrots out of icing and they look fab, very realistic

Carrot cake keeps for ages - the recipe I use has no alcohol and keeps for at least 10 days. I've found if its baked a couple of days early it goes lovely and moist. I've got a sale on today and baked my carrot cake on Wednesday.
