What can I do with two egg whites to use them up?

Whip them up with 4oz sugar and make meringue nests. Bake in oven for 45 mins or so at 150 then fill with chocolate shavings and mini eggs in the morning. Easter Nests!!!

I freeze mine and use them in a pavlova later (Nigella's chocolate and raspberry is easy and lush).

I usually freeze them till I've got enough to make meringues or friands.

make garibaldi biscuits! they are so so easy, no beating required. Note that all the quantities are equal, so weigh your 2 egg whites and use the same amount of everything else, plus double of currants, iyswim.

Garibaldi biscuits - Marcus Wareing

  • 100g/3½oz butter, melted in a saucepan
  • 100g/3½oz icing sugar, sifted
  • 100g/3½oz plain flour
  • 100g/3½oz egg whites
  • 200g/7oz currants
Mix together the butter, icing sugar and flour until smooth. Slowly add the egg whites, stirring, until they are completely incorporated, then fold in the currants. The dough will be quite wet. Place in a small bowl and chill for at least one hour.
  1. Line a large baking tray with greaseproof paper, and spread the mixture out, as thin as you can. Chill in the fridge for 30 minutes.
  2. Bake the biscuits at 180 degrees for 20-25 minutes or until golden brown. While still soft cut into slices with a sharp knife. Leave to cool, then keep in an airtight tin. If they go soft, re-crisp in a hot oven for a minute (when you have the oven on for something else, obv).
