...if you look at a recipe and think, 'That's never going to work,' you're probably right.
I did something I rarely do today and followed a recipe to the letter. The cakes I make have to be gluten-free and dairy-free, so I'm used to adapting, left, right and centre. Today I followed a proper free-from recipe and thought, 'Plain flour, only two eggs, a 9" tin...how's that going to work?'
It won't, is the answer. Why I didn't double the quantities/use a smaller tin and substitute self-raising flour, I will never know. I trusted the recipe - fool that I am. That's my one foray into following a recipe - I'm back to winging it and adapting Mary Berry!
Oh well, hopefully we'll all enjoy our Easter biscuit that was described as a cake in the book!
Or I might make another, but make it up as I go along... which I could have done anyway.
