Oh wise ones, save me from my mushroom incompetence

Some gorgeous flat mushrooms have arrived in my veggie box, but I never manage to turn them into the luscious objects I'm sure they want to be.

Other than chop 'em up small and use them like any other mushroom, what should I be doing with them?

These are lovely and very simple.

5 lg mushrooms. 1 diced.
Olive oil
1 leek
Thyme
2 cloves Garlic
50g Blue cheese / goats cheese
Pine nuts

Brush mushrooms with oil, season put in oven - top side down for 10 min
Fry mushroom, leek & thyme for 5mins until softened, add garlic fry for 1 min.
Take off heat and add cheese and pine nuts, season.
Put filling onto baked mushrooms and bake for a further 15mins - nice with Green salad.

Mmmm....

Mine seem to end up dry and shrivelled, but also raw - do you think I've not been using enough oil?

I add a little bit of water in with mine, only a tsp or so, not much.

When I cook mine, I use a mix of butter/oil.

Buttered mushrooms on toast was my supper Sunday night.

Complain to your veg provider if they end up dry and shrivelled. ... Fresh mushrooms should be plump and full of moisture. If they are fobbing you off with old ones, they'll never taste right.

Nothing wrong with the mushrooms, they're luscious looking when they arrive. And with a variation on snoworneahva's recipe were luscious last night! Thank you!

I simply haven't been cooking them hot enough, for the right time, I think.

Mushrooms in butter and oil then add garlic and cream and some cheese and serve on garlic bread. Mushroom Alfredo yum

Cop them fairly large and fry in butter with garlic. Serve on crusty bread so the juice makes the bread grey.
