Can it be done?? Ok I know it can be done but I've never done it before. Will it taste 'lacking'?

Have you got any vermouth/martini? A small measure of that works well in the absence of wine.

On the other hand, it is only 2pm - can you get to a shop?

Gin or red wine. Whisky.

Too coooooool to pop out. DS's school is nowhere near the shops.

Should be fine. Could use a squeeze of lemon juice to replicate the sharpness of the wine.

You can always substitute wine with apple juice.

I have done it, it isn't as good, but I roasted some cherry tomatoes until they were partly blackened and put them in my risotto for punch. It did save it. I would use vermouth/vodka/gin as mentioned if I had any.

I'm tee total and I never use wine in my risottos and I've never had any complaints .

It's fine without. We do with or without just depending on what's in.
