What can I do to use up breadcrumbs?

I've been diligently saving the heels/crusts of loaves of bread and I've now got quite a collection of breadcrumbs in the freezer. I'll use some of them up as topping for macaroni cheese and in nut roast but that still leaves me with loads!
What can I do with them?

I use mine in beefburgers, Christmas pud, and for coating fishcakes, fish fillets and rissoles.

i use them mixed with herbs and sometimes she dried tomatoes roads make a topping for salmon fillets. Pan fry to seal them add crumb mixture drizzle with olive oil and pop in oven. Can also use for homemade burgers/meatloaf/meatballs

This week I've made breaded chicken chicken nuggets and was very yum.

My fab dinner is pesto salmon, mix pesto in breadcrumbs and top salmon and bake.

Slice up some chicken or pheasant breasts into long fingers. Coat in flour, dip in beaten egg and roll in the crumbs. Fry in oil and place on top of bed of spinach. Eat with bowl of aioli. Perfect starter for two!

Breaded mushrooms with garlic mayo?

Mix with cheese for a nice crispy topping for a pasta bake?

Bread sauce
Walnut and beet root hummus a la HFW

A dip of some kind?

Oooh, treacle tart! I knew there was a pudding that used breadcrumbs but couldn't remember what. I love treacle tart.

Using them on breadcrumbs is also a great idea, thanks!

I second the mushrooms. Bake in the oven with a little oil. Chop up some more mushrooms finely. Fry with some butter and garlic and add a little cream. Top the big mushrooms with the creamy mix. In another pan melt some butter. Fry breadcrumbs for a minute. Add some herbs and top the mushrooms. Bake for 15 minutes. I love them!!

Or make veggie stuffing to go with a roast.

Or dip some Brie chunks in egg then crumbs and deep fry.

I freeze bread crumbs in small zip bags. Works a treat. We're veggie, too - I would recommend Delia's vegetarian sausage rolls to use up breadcrumbs but also because they are delicious and so easy to make if you use bought puff pastry. I freeze them uncooked - they're really handy for a carb fix when I come in from work!

Pappa al podoro is a huge hit here. I would use them to make bread sauce to go with chicken , but that is of no use to you as a veggie , sorry !

Cheese and leek sausages are delicious. Mix approx equal quantities of breadcrumbs and grated cheese - I don't measure but reckon 300g each. Mix in two beaten eggs, some herbs and seasoning. Form into sausage shapes and chill before frying. Amazing with mash, veg and gravy.
