For a friend in need who's coming round to cry on my shoulder tonight?

Will be stopping at Sainsburys on way home and need to make dinner in about 20 mins. Not pasta. Any ideas?

Buy a nice ready done quiche and some ready done salads in pots, like COus cous etc.
Maybe some nice bread

Sorted!

Camembert, nice bread, radishes, celery, olives etc
Lemon or chocolate tart
Prosecco

Omelette, bread, salad and or fruit

Furball · 15/03/2013 17:20

a fresh soup and crusty bread. Easy to get down

Furball · 15/03/2013 17:20

when I say fresh - I mean like a covent garden type thing, not make your own

Jamie Oliver's Tray Baked Salmon with olives, cherry toms, green beans, etc is a good one. Bung it all in a roasting tray and 12 mins later it's done. Serve with new potatoes if you need carbs, but really tasty on its own. And I'd just pick up a massive tub of good ice cream for pud.

Agree with Repus, Camembert, which you can pop in the oven for about 15/20 mins, lovely bread etc.

Nachos. Spread plain tortilla chips on baking sheet, cover with dollops of refried beans (from tin) and grated cheese. Grill 5 mins. While grilling, mash 2-3 ripe avocados with lime and salt, and mix in fresh coriander, diced tomato and red onion. Serve with sour cream and spicy salsa from a jar. Ply friend with Coronas or margaritas.

Fajitas, using one of those kits?

Mendi · 15/03/2013 17:27

Traybake sounds good dairymoo. Friend has weird food issues so has to be healthy - though I would prefer the baked camembert!

Ah then it's just the ticket. V healthy indeed but tastes delish.
