Slow roast with salt, lemon and fennel seeds. Crisp up crackling at the end.

Cut into cubes and braise slowly with soy, a bashed up piece of ginger, garlic and chili (chili bean paste if you have it, otherwise fresh or even dried flakes). Serve with white rice and a steamed green vegetable like broccoli or bok choy.

I turn mine into a sort of Cassoulet - bean based casserole. Cut the belly slices into chunks, fry until browned, then add them to a casserole dish. (If you have a couple of sausages or some bacon handy, cut those up and brown those as well). In the fat that runs off soften a chopped onion, chopped celery and a little garlic before adding to the same casserole dish. Then stir in a can of drained cannellini beans, a couple of chopped carrots and a can of good quality chopped tomatoes or passata. Season well with salt, pepper, a few mixed herbs and a pinch of chilli flakes, cover and bake in a moderate oven for about 1 hour until the vegetables are tender and the sauce has thickened. Serve with crusty bread.
