...and am feeling relaxed and uplifted, just having the smell of them on my hands! Next time I need a spot of pampering, I know what to do!

I've got more than I need for the onion soup I'm making, though. How long will they last in the fridge? And can I freeze them?

don't try freezing fresh basil - chop it and make basil oil by sticking loads in a bottle of olive oil. It goes funny if frozen.

they longer you keep them 'fresh' the less potency they will have, for a more 'fresh' taste Confused you can chop and freeze them in icecube trays, with a little water

they are best chopped as the leafy types will lose their texture during the defrosting
