How do I make a stir fry sauce?

That will go well with salmon and stir fried veggies?

I try and cook from scratch as much as possible but I have trouble replicating those fresh sachets of sauces you can buy - sweet chilli, sweet and sour etc.

I know things like garlic, chilli, lemon juice, olive oil, vinegar etc must be involved but how do I get the right gloopiness?

I think the gloopiness comes from the fact that most of them have a conrstarch/water mix as a component which acts as a thickener but more experienced cooks than me may know better. I have used this site before stirfry sauce Smile

I don't do mine gloopy but I put in a tablespoon of thai fish sauce, lots of fresh lime juice, a bit of rice wine vinegar and a tablespoon of soy sauce. You could probably add some runny honey to that if you like it sweet.

I mixed a concoction of lime juice, soy sauce, white wine vinegar, garlic, chilli and honey. It was delish! Smile
