What savoury dishes can I make with eggs?

I'm not keen on dishes that revolve around egg, e.g. omelettes, frittata.

What meals can I make that have egg as an ingredient (bearing in mind that I'm on a diet at the moment)?

Chicken and sweetcorn soup. Quick, easy, low fat, contains egg.

Add some garlic and ginger to chicken stock. Throw in some finely chopped cooked chicken (or chopped up raw chicken if you want - you'll just need to make sure it's cooked) and a tin of sweetcorn. Thicken with some cornflour. Beat egg(s) and pour slowly into the soup, stirring as you do so (so it makes fine strands). Throw over some chopped spring onion and serve with prawn crackers.

Or make a simple risotto and serve with a poached egg on top, so the yolk can run all over everything,

Ham and cheese tartlets (diet friendly I promise!)

Spray a bun tin with spray oil (fry light) and line each bun place with wafer thin ham.

Mix together low fat cottage cheese, 2 eggs and any chopped stuff you like - maybe spring onion or tomato - and spoon it into the ham cases.

Bake in the oven for about 15-20 mins.

Absolutely yum.

Also, japanese style noodle soups are nice with a hard boiled egg on the top. You could make a tea-stained egg if you can be arsed.

Or use the egg whites and cornflour to velvet some chicken for a stir fry. Makes it lovely and soft.

Egg fried rice, with lots of veggies (peas, beans, spring onions, mushrooms) and not too much rice.

Poached eggs and spinach is nice. I also like lightly poached egg with peas and wholemeal pasta/little bit of parmesan. Basically dark green veg takes away the egginess of the egg and balances it really well (if you like dark green veg that is).

A couple of suggestions:

This a vegetable and noodle soup with egg is really tasty, wholesome and easy to put together.

Quiche without the pastry.

What a crustless quiche? Tub of quark mixed with 2 eggs and whatever quiche filling you like, eg salmon and asparagus, bacon and tomato etc plus seasoning. Put it into a small dish, if you like you can put a couple of ounces of cheese on top. Bake at gm 5 for 30 - 40 mins.
