I have 2 extremely busy weeks coing up so I thought I might spend this aftrenoon sipping wine preparing meals in advance, freezing for later in the week and the Monday and Tuesday meals in the fridge to reheat. Just wondered if anyone else does this, does it actually save time and any ideas for suitable meals.

Meant to add that my plan for this week is
Mon - Chickpea and sweet pot curry
Tues - chilli con carne and rice
Wed - Chicken pie and veg
Thurs - Vegi spag bol
Friday - Pizza (out of the freezer for DC's) Fish and chips for me and DH

Having made a pressure cooker of Bolognese Sauce yesterday and another one of Veggie Chilli last week... yes. All got portioned up into single servings and stored in the freezer for another day. However I start to miss fresh food if I eat that way all week so, even if busy, fall back on quick standbys like Spinach Omelette or various salads.

I would try and mix some fresh stuff with the meals e.g.a side salad with the slag bowl, steamed veg with the chicken pie.

Liking the idea of a slag bowl!
I'm trying but failing to do this. I've made a veg lasagne and plan to do chilli and cheese sauce ready to go with rice & pasta/cauliflower respectively. But I do need more inspiration and time.

I just thought if I spent 2-3 hours today which is a quiet day rather than panicking every evening. Will give it a go and report back.
