I'm sure I recall seeing some slow cooker rice pud recipes around before, but can't find them now!
Does anyone have one to recommend?
I have a 6 litre slow cooker (!) but I need to make one to feed a crowd and I don't mind leftovers Grin

well, don't take advice from me. I cooked mine for two full days and the rice still had too much bite to it....

haven't mastered this slow cooker thing at all.

OK.. so no one has come along to rescue us (yet). So I trawled around and found this on the slow cooker thread:

"Also do a great rice pudding - 150g pudding rice, 150g caster sugar, 1 400g tin evaporated milk, 2 pints ordinary milk, grating of nutmeg. Stir once or twice during cooking and try not to eat all at once!"

Also this recipe on the CrockPot website: www.crockpot.co.uk/Recipe.aspx?rid=1654

I want to try the Mumsnet recipe as it looks really good, but am nervous for making it for a crowd without a practice run. On the other hand I'm not going to do a practice as I'll end up eating it all. So I'll have to chance it. Will report back... moment of truth will be next Saturday.

Oh only just saw this: I make smaller portions like this (I think my SC holds 4 litres max):

pudding rice to milk ratio about 1:6 or 1:7 so I use ~80gr rice and 500ml of milk.
pinch of salt and 1 TB of sugar - adjust to taste obviously, we add sweet toppings so hold back on the sugar in the rice.

Place all in SC and mix, I them put in microwave for a few minutes to warm the milk up.
Cook on high for 1 hr - stir well half-way though.
Stir
1hr on low
stir
1hr on low
DONE

Possibly not as rich or creamy as some of the other recipes that use extra cream or evaporated milk, but it's a hit with my kids who I have successfully weaned off the Muller rice pots now.

Thanks Anja!

MedicPeso · 10/03/2013 21:49

Anja, I used your rice pudding recipe, it was lovely. I used 100g pudding rice, 600ml milk, 50g sugar (but no salt). I would have added some vanilla essence, but mine was out of date. I think I'll cut the sugar down a bit in future as it was more than sweet enough.

Woohooh, I've used my slow cooker Grin!

Hooray Grin

Iamcountingto3 · 10/03/2013 21:52

marking my place to do this tomorrow Smile

Esker · 10/03/2013 22:33

Thanks Anja, sounds good!
MedicPeso - how many portions would you say you got with your quantities?

2 large portions Blush, but could be 3 smaller ones.

In my defence, my pudding rice suggested 50g/person.

I use Eliza Acton's recipe, you can find it on Delia Online.

Kazza7 · 20/09/2016 18:52

Silly question but if I've doubled this recipe how long should I cook it in the SC? Thanks!
