We have been given a lovely jar of honey from a colleague who keeps bees. Apart from eating the whole jar on crusty bread - I would love to bake with it. All recipes and recommendations appreciated!

I do a roast of chicken thighs/drumsticks or ribs or even sausages, marinated in a half/half mix of hoi sin sauce & honey. Be generous mixing up your sauce, it goes well over rice or potatoes (homemade chips or jackets).

This one (mine) - no fat so you need a silicone baking pan. I wonder if you could up the honey amount and decrease the sugar as well, but I've not tried that:

Easy dairy-free honey cake
Makes: 10 small slices

3 eggs
75g sugar
3 tablespoons honey
90g self raising flour
1 pinch salt
1 teaspoon oil

Preheat oven to 180 C / Gas 4.
2.
Separate egg yolks and whites.
3.
Add sugar and honey to yolks and beat well.
4.
Gradually mix in flour to honey mixture, by the spoonful.
5.
Add a pinch of salt to egg whites and whisk until stiff.
6.
Gently mix egg whites into the yolk-flour mixture. This is quite stiff to start with, so add it bit by bit, you can then start mixing more lightly when the first few spoonfuls of egg have been incorporated.
7.
Turn into greased loaf tin, or even better into a silicone tin.
8.
Bake for 30 minutes in the preheated oven (not fan assisted if possible).

Bbc good food website has a one pot honey and mustard chicken recipe, we use carrots instead of parsnips though otherwise it's too sweet

I do a honey marinade for chicken or pork, too. Big tblspn honey, 1 of OJ, 1 of soy. Add grated ginger, 1/2 tsp of five spice and a small squeeze oif garlic puree. Mix together, marinade the meat and bake in the oven. Divine.
