Roasted veg.

Even though I love eating roasted veg, I am embarrassed to say that I've never cooked it myself Blush.

I was going to have a go tonight with some courgette, red pepper, red onion and small tomatoes. Do I just chop to all up and drizzle with a bit of olive oil and whack it in the overnight for half an hour or so?

Yes.
Plus season.
And I wouldn't put the oven quite as hot as with roast potatoes or they may char on the edges.
I do mine at 190

I would put the courgette, pepper and some whole cloves of garlic in first for 15 minutes. Then add the red onion and cherry tomatoes for about 25 minutes. And leave the onion in fairly large chunks, cos otherwise it tends to burn.

if the onion is burning you are putting in on too high a tempreture, my timings would be onions peppers garlic, then put the courgettes in when the other vegetable are almost cooked but not quite. cook the toms seperatly and add at last minute - otherwise the liquid in the toms will boil/braise the veg

It's important to place the veg on a fairly shallow baking tray otherwise it tends to steam rather than roast. You could add whole cloves of garlic and they will go all gooey and sweet and sticky.

Hmm..I rather fancy roasted veg myself now.
