Freezing some meals, any suggestions?

My mother in law is trying to eat healthy so for this Mother's Day I've decided I'm going to fill her freezer with some meals. She has ME so can easily become tired and has a hard time remembering things (like food cooking) so want things that can just be thrown in the microwave to warm up. She isn't too keen on any seafood and although she will eat meat, she is happy for things to be meat free as well. She likes traditional foods mostly, espeically things like Spaghetti and Lasagna.

Thanks in advance for any ideas :).

beef lassagne, cottage pie,chicken/veg curries, veggie or meat chilli, vegetable soup, beef/chicken stew.

As well as spaghetti and lasagne you could do..

Shepherds pie
Chicken cacciatore
Hotpots
Chilli con carne and rice
Macaroni cheese
Cauliflower/broccoli bake
Ratatouille
Individual pies with a top crust only

Make up individual freezer bags/tubs of side dishes like mash, or seasoned part cooked wedges that she just had to throw in the oven. And some frozen individual bags of mixed veg that can just be microwaved to go with a meal.

What a lovely DIL you are Smile I might do the same for my MIL but lace the food with laxatives Grin

I freeze chilli, curries, pasta and Tom sauce sort of stuff, mash, rice, rice pudding, scones/ sponge cakes in individual portions. Home made soups, stews, beef bourginouf (sp) chicken and mushroom in sauce etc - if you freeze the sides separately then she can choose what to have with what.

Fab idea !
