How do you make one????

Really want one, but don't want it to come out like scrambled eggs

my fool proof way: heat a small frying pan quite hot with a nob of butter (so that the butter doesn't burn, it's best to heat the pan first and then put the butter in - it'll froth as it melts).

meanwhile, whick together (you only need a fork) two eggs until they are well mixed. Just before puttingit in the frying pan, season with salt and pepper.

Pour into the frying pan. Shuggle (shake) the pan and while doing this gently pull the rapidly setting egg in from the edges and tip the pan so that any liqid eggs fills the gap. Turn off the heat before it all oges totally soft - you still want it to shake on top. If you don't like it too eggy, let the residual heat cook it a wee bit more.

Slide on to a plate. East. Mmmmmm

Too avoid the flipping bit, I tend to put mine in a pan with a removable handle ; after frying it I then put it under the grill to cook the top.

Oops - I forgot the "folding" bit. As you are sliding it on to a plate, let ti slide out half way and then push the remainder (ie the bit still in the pan) over the bit on the plate - and voila, a folded omelette!
