after trying something new and thought since we eat a fair bit of meat, it'd make a pleasant change to try something veggie Smile ty

I really like the vegetable rogan josh in Jamie's 30 minute meals. I can't find a link to it at the moment.

Grin we also have Hugh fearnley-whittingstall's veggie book. It's got a lot of fab recipes in there. I like his roasted root veg frittata as well frittata

Mexican lasagne - onions, peppers, courgette, sweetcorn and various mixed beans cooked with a tin of tomatoes and a fajita seasoning mix. Layer up in a large dish using tortilla wraps and grated cheese, then bake in the oven for 20mins so cheese on top melts. Serve with a tub of sour cream and chive dip and salad - delicious!

Chick pea and spinach curry.

I used korma sauce but I think anything would do really. I used paste, patak pastes contain 8 servings for £2.

I served it with brown rice.

Red dragon pie (aduki beans, bulgar wheat, carrot/onion/celery soffrito, tomato puree, veg stock, mixed herbs, soy sauce) topped with potato for a shepherds pie style meal is tasty and warming on a cold day
Lentil dalh - plus spinach if you like it is nice
I'd agree that the Hugh F-W veggie book is very good for recipes that usual meat eaters will probably like too, there is a recipe for a mexican style dish of peppers and baked eggs which we've had a few times
Frittata
Risotto
Pasta and home made tomato sauce is probably our resident vegetarians favourite meal

I second Hugh FW book- it's got lots of good ideas for yummy veggie meals. There are also other threads in this mumsnet chatgroup that mention fav vegetarian dinners. Our favourites include:
Jambalaya: a great, and easy to make, rice based dish with kidney beans and paprika.
Moroccan carrot and chickpea stew
Veggie curries are always a hit. I've been meaning to make this Pea, Paneer and Spinach again as it was such a hit and my daughter enjoyed the spinach in it!!!
