perfect pizza base recipe?

How do you make a perfect thin crust pizza base? Seems to be turning out a bit doughy.

I use the Jamie Oliver recipe and give the plain bases 2 minutes in the oven before adding any toppings.

I precook mine in a frying pan with a lid: get as hot as you can, put the base in, put the lid on and wait until you see bubbles appear in the dough. Flip and cook the other side. Add your toppings and stick under other grill.

I don't do mine in the oven as it needs to be scrupulously clean to not smoke. Which mine is not...
