Natural yogurt thinned down with a little milk is a good sub or lemon juice added to milk and left to stand for a couple of mins also works, though not sure with low fat milk.

A splash of vinegar in normal milk

Tsp of lemon juice in the 1% milk will do it

I use yoghurt and milk (75ml yoghurt + 125ml milk = 200ml of buttermilk substitute) - I use that even when I have shopped, as it is way cheaper than buttermilk.
