Any ideas for a nice veggie meal?

I am having some people over for dinner soon and it needs to be vegetarian. Not sure what to make that would be really nice but not too tricky. Does anyone have any ideas? Thanks

Indian food has a lot of lovely vegetarian dishes. Colourful, tasty, varied textures and very easy to make once you've sourced the spices. I recently dug out one of my Madhur Jaffrey books and made Channa Dahl, Saffron Pilau Rice, Cucumber Raita, an Aubergine dish, poppadoms (bought those) and some fluffy Naan with dried fruit. Pickles and chutneys on the side... a feast!

Oooh Indian is good, veg bhajis, paneer and peas, naans, lemon pilau, saag aloo and a really good dhal

I always err toward mezze, grilled Courgettes with mozzarella, spiced chickpeas, stewed paprika-y peppers, stuffed sweet peppers, cheese, baba ganoush, hummus, etc. But that is because I'm not a great cook, and can't do an Indian feast, if could though, I'd go with the IndianGrin

Moussaka with a lentil / pulse layer instead of mince.

Stuffed peppers.

I make a mean veggie chilli but that may be too informal? I use peppers, onion, kidney beans, cannelini beans, paprika, tinned tomatoes, cayenne pepper, chilli powder and flakes and a dash of BBQ sauce, delicious with cheese and soured cream.

Fried halloumi with a nice dressing works really well as a starter - there's a good recipe in Delia's summer book Smile
