There's a good one in a HFW book, Everyday I think? I haven't made it for a while but it involves browning chicken legs, then making a sauce by blending a tin of coconut milk and tomatoes and spices. The chicken bakes in the oven, in the sauce. Very easy and very tasty. I can look it out for you if you like.

Oh my best ever dinner is tandori chicken, pataks tandori paste, mix with yoghurt, stick the cut up chicken in it for a couple of hours then put in the oven.
I like it so much I lick the paste off the baking tray when DH isn't looking.

Lookslikerain this curry is fantastic(according to my DH as I'm not a big fan of them)

Spices-you can buy them separately, either ground or whole ones, toast them in a pan and grind them.Easier version is curry spice/paste or/and garam masala.

Chopped tomatoes or tomato puree(cheaper and more tomatoey)

Coconut milk or coconut cream or creme fraiche

Onion,garlic,ginger

Fry the meat(chicken or beef),Chop the onion, garlic and ginger or whizz them with tomatoes(or tomato puree with water),add to meat with spices(up to your taste) and cook on slow(beef will take longer).Add the coconut/creme fraiche at the end.
It's freezable.
