what to do with salmon?

Doing next weeks meal plan and have some salmon fillets in the freezer I usually just bake it in foil and add to pasta with pesto/creamy sauce. Its lovely but doesnt do the salmon justice really. What else can I do that is cheap and easy hopefully. If you do noodles/rice what exactly do you add to them for flavour? Oh its for me and dd and potatoes mashed/boiled are a no-go. So can't do new pots.

Sprinkle chilli flakes on salmon and grill
Serve with noodles or rices with stir fry greens, or new potatoes and broccoli
For flavour in noodles I stir fry some garlic , ginger and chili then add fresh noodles, sesame oil and soy sauce
Rice you can cook in stock and stir in done chopped coriander and a squeeze of lime

Another salmon recipe is to use butter, mint, lemon juice and cubes of feta cheese then put in oven for 10-15 minutes

Sorry just saw new potatoes not possible!
Will she eat thinly sliced potatoes cooked in oven, like thick crisps? If so then there is a nice recipe on waitrose website for salmon, thin slices potatoes, fennel and creme fraiche which is then baked in oven until potatoes nice and crispy

but if spicy is no good, salmon en croute is very easy. I roll out half a pack of puff pastry, put salmon (minus grey skin) on top then brush with pesto and pile on spinach leaves. Bake (timing is on the back of the pastry packet but I think is 15 mins ish)!

I soak the salmon in soy sauce then cook it on the barbecue.

I generally serve it with plain boiled rice.

I usually do the pasta and creamy sauce thing too, but with loads of peas and some chopped up dill.

Ceeveebee's already done the chilli salmon noodles one.

Squeez a lemon wedge over the salmon, spread with a bit of pesto and sprinkle with breadcrumbs and parmesan and grill. Serve with white rice with added peas, toasted pine nuts and some grated parmesan. YUM!

Some lovely sounding recipies here thanks :) do you have a link for the waitrose one?

Potato gratin is hit and miss depends on her mood. Going through fussy toddler stage of green avoidance at the moment though so veg she can clearly see gets ignored, but if it is inside things such as a sauce or mixed in with pasta/noodles I have a chance of her eating it or at least trying.

Spice is fine for dd, I have more of a problem with it than she does. Blush
