Excess eggs

We have 12 eggs needing used up or can I freeze them? We don't eat eggs as omelette, scrambled, fried etc so need to use them as a recipe ingredient like in a cake or something.

You can freeze egg whites.

A flourless chocolate cake will use quite a few eggs.

I always make lemon curd but that'll only use 1-2.

Meringue with the whites and custard with the yolks. Quiche? Carbonara?

make pancakes and freeze them?
1cup eggs (about 4)
1cup milk
1cup flour

fill sweet or savoury.

I like quiche but never attempted making my own, pancakes are a good idea too.

You can freeze them. Whisk them up so that the yolk and the white are mixed and then freeze in portions (I use a large ice cube tray). You can then use in cakes etc.

Or make up a load of cake mix and freeze in paper cases so that you always have fairy cakes within minutes.

I make a feta and pesto quiche with four eggs some milk and a dollop of Philadelphia.

D they really all need using up at nice? Eggs last for ages.

Am I the only one wondering why you've got 12 eggs if none of you eat them? Grin.

3 cakes with 4 eggs each would be my suggestion if you won't eat 'em any other way.

If its the date on them worrying you then you don't need to rush them IMHO. Used a couple of eggs the other day a month past their date, and they were fine. I always check they look and smell ok first.

I'm hoping noones going to tell me there's a good reason I shouldn't...

Oh but it takes about double the amount of time to cook than they say, maybe because my dish was too deep but a lot of the comments say the same.
What about toad in the hole? Jamie Oliver's recipe uses 2 eggs.

Pickled eggs! Hard boil them, shell and pop into cider vinegar- ready in 6 weeks. DH loves them.

I don't use a recipe I'm afraid I just make it up as I go along.

Blind bake a pastry case. Then take four eggs and whisk them up. Add a splodge of milk and half a tub of cheap Philidelphia. A couple of spoons of pesto. Mix it all up.

I then take a teaspoon of pesto and spread it over the part cooked pastry, crumble up half/a third of a pack of feta into the case and then whack the egg mixture over the top. Bake it for about half an hour.

It's a firm favourite here with DH and the DSs (7 and 5)
