Hoping someone can explain the reward system to me please! I have £4 worth of vouchers and want to turn it into pizza express vouchers. Can I "bank" them until I have a decent amount!

Yep, just leave them in your account until you have enough to use.

They do ahve an expiry date on them - it's about 2 yrs from issue, IIRC.
