Does any-one have a recipe for a Jaffa cake tray bake that they would be happy to share please?

I have looked in the recipes section but cant find one.

I don't have a recipe but I used to own a Gary Rhodes cookbook that had one in so I'd start there! (Mind you I ditched the book because he is all about the technical and I am all about the chuck it all in and hope for the best - Jamie is my saviour).

Mind you, I'd have thought it would just be a victoria spong base, followed by orange jelly - made with gelatine sheets and orange essence rather than the kiddies rowntree stuff and then melted choc after it's set. I s'pose you'd have to set the jelly seperately and then put it on top of the sponge. Mnnnn. Jaffa cakes.

For the jaffa layer, you can make up jelly, slightly stronger than usual, using orange juice and set it in a tin the same size as you'd bake the cake in. The cake only needs to be a simple sponge, maybe with some orange zest added for flavour. When the cake is cool, lay the jelly on top and chill the whole thing beforeing coat with chocolate ganache.

Makes sense really that is is sponge, jelly and chocolate.
