how about buying some potato cakes and then making a huge pan of scrambled eggs serve with fresh orange juice, coffe etc???

Fritatta
your breakfast date has probably come and gone now but anyway

you would need a very large deep sided frying pan that will also go under your grill
16 eggs beaten
4 potatoes peeled and sliced, and par boiled for 3 minutes
1 onion very finely chopped
I red pepper cut into strips with seeds removed
200g of mushrooms finely sliced
150g of strong cheese
olive oil
salt and white pepper

  1. heat a good half cm of oil in your pan and add the onions and pepper strips and saute (fry gently) for 5 minutes stirring well so they don't stick or burn. Remove from pan and set aside
  2. add another slug of oil and fry the mushrooms, seasoning with salt and pepper. Remover from pan and add to onions and peppers
  3. Now start to layer the vegetables: cover the bottom of the pan with a layer of potatoes, salt and pepper, other vegetables, potatoes, salt and pepper, other vegetables and finally the potatoes.
PRE-HEAT YOUR GRILL TO MEDIUM HIGH
  1. Pour over the beaten eggs, easing their passage a little with a wooden spoon around the edges.
  2. Cook very gently for 5 minutes
  3. Grate or thinly slice the cheese over the top and lift the pan under the grill.
  4. turn the pan in quarter turns so the cheese grills evenly
  5. Leave the fritatta to stand in the pan for 5 minutes before a) cutting into wedges and serving straight from the pan or if you are feeling adventurous b) loosen the edges of the fritatta from the sides of the pan with a spatula, have 2 large enough to fit over the pan dinner plates standing by, place one plate over the pan, hold firmly and flip the fritatta on to it, then repeat the process with the other dinner plate so your masterpiece stands proud and firm on its own plate and take to the table.

serve with crispy bacon

actually, re-reading that recipe I would par boil the potatoes for 5 minutes and slice them very thinly too and of course you can add herbs to the beaten eggs, maybe thyme or oregano.

Kedgeree is lovely - or eggs benedict is also fantastic:
Split & toast an english muffin then top each half with thick carved ham/canadian bacon, then a poached egg and hollandaise sauce. For veggies do eggs florentine, replacing the ham with wilted spinach.
