Okay, how do I make pancakes?

I mean both the batter and cooking techniques.

I'm not a good cook. I've got better over the last year or so, but I still hate it.

Usually DH makes the batter, but he's away today. I can usually manage to actually cook them, but think it's a fluke rather than talent.

Please, throw your batter and cooking instructions my way, before my children realise I'm useless!

Here's my standard recipe....

2 large eggs
4 heaped tablespoons plain flour (about 4oz)
about 1/2 pint milk
knob of melted butter
salt

Whisk all of the above together or whizz in a goblet blender until you have a smooth batter. Let it sit for a minute or two so that any big bubbles go away.

Heat a non-stick pan and add a small knob of butter. The butter should sizzle but not smoke. Tilt the pan so that the butter covers a good area.

Pour in enough batter to coat the base of the pan, again tilting as you pour. Allow to set, shake loose, flip and cook the other side.

Well, thanks to DH's "system" I ended up using self raising flour for the first set. They were arguably better than my second set - which have made me feel confident about my ability to make tortilla wraps Hmm
