Vegetarian dish for a wake

PilgrimSoul · 11/02/2013 22:47

Im looking for some inspiration. Normally I make a lasagne or shepherds pie to bring to a wake. However, a neighbour has passed away, and the family are mostly vegetarian.

So something comforting, easily reheated, is a meal in itself and simple enough for me, who never cooks vegetarian to make.

Ideas needed!

What about a chilli? I just substitute mixed pulses for the mince. Sainsbury's do tins of mixed beans.

Or a curry with something like butternut squash and cauliflower.

Or you could make your usual lasagne but switch out the mince for mushrooms, peppers and aubergines.

How about pasta salad or rice salad?

Or veggie shepards pie if you want something hot?

Or veggie pizza, garlic bread, veggie mousakka, lentil dahl and nan bread, falafel or arancini?

If they're ok with meat substitutes how about veggie bacon rolls, burgers or hot dogs?

Thank you both. I like the idea of the vegetarian lasagne and the lentil Dahl, might make both of these.
I like the thought of arancini (had to google them), are they ok reheated?

Actually I'm not sure re. reheating arancini because of the rice in them. Ah i've just googled it and it says "arancini can be fried several hours ahead of serving and reheated in a slow oven".

Thought of a few more, veggie samosas, spring rolls, breaded mushrooms, potato wedges, veg and haloumi skewers (could serve with pitta and salad, hummus too if you want, potato cakes.

Cous Cous dishes are easy and quick, the Cous Cous cooks in minutes, you could serve with reheated veggie and bean stew, curry, chilli, the aforementioned skewers, veggie hot pot.

Or how about a pasta bake? Easy to make and reheat.

Oh . . baked potatoes! Nothing could be easier, comforting and could serve with cheese and beans.

One of our school Mum's does great veggi chilli.
It's a while since I had any, but I think it was mainly beans, carrots and possibly swede.
Butternut squash and mixed beans would work well.

I think I'd go for a veg lasagne, or aubergine primavera. Both are nice, easy to reheat.
