Yuk sung question

Just made a veggy yuk sung and have a couple of questions. What are the crunchy bits you find in a Chinese version and how do you seperate the lettuce leaves so they dont look like a torn rag.

Crunchy bits are tinned water chestnuts, chopped finely.

Use iceberg lettuce and the best way I've found is to cut the bottom of a leaf and then separate the leaf using running water in between leaf and the rest of lettuce. Drain upside down - sometimes helps the wraps if you trim frilly buts so it's more like a bowl .
