Will this veg soup work?

Have decided a cheap easy meal for lunches next week for dh is veg soup and want to try it.

Ill get carrots
Leaks
Peas
Parsnips
Onions
Peppers
Potatoes

And vegetable stock and shove it in the slow cooker until done .
May add some chicken?
Will this be ok to freeze? Won't the stock freeze and make it hard to serve. Ill put it in one big tub in freezer. But when I take out a little bit each night to defrost won't it be hard as stock will freeze?? :S
I've never frozen soup before lol.

Sounds lovely but I would leave out the peppers, the other veg are all classic for a veg soup but the peppers might add a bitterness to all the other more soothing veg. I wouldn't bother with chicken personally. If you are freezing you would be better to freeze in individual portions in freezer bags otherwise it is going to be really hard to hack bits off a large lump to get enough for a portion, it will keep in the fridge for about 3 days so you don't need to freeze all of it.

Leave out the peppers I'd sat too..
use thrm in a tomato based soup later.

( having said that I did a chicken stew from the back of the soup mix packet, which had chicken onions celery and peppers - and soup mix - so barley peas lentil - and it was great!)

It'll freeze fine but freeze it in meal size units ( I measure 2-3 ladles full per person for the freezer). You'll never chip frozen soup into servings.

Oh and I can't get potatoes to cook well in my slow cooker - no idea why, so I'd do a potato containing soup on the hob.

I do a soup similar to that with chicken, but I don't put peppers in and I put leeks or onions in otherwise it can be a bit overpowering. I, also, usually put celery and sweet potato in. I do it on top of the hob, I don't freeze it as we have it for tea one night then DH and I have it for lunches for a couple of days so I put it in the fridge.

Thanks for the ideas . Seeing as ill just do veg no meat can I leave in fridge for 4 days and take out each day to put in lunch box? I can always cook a sausage or bacon to put in night bbefore?

What other posters have said re the peppers.

Also wouldn't do it in the slow cooker - it won't take long on the hob
