Nitrite free pork products in the Midlands area?

I have found some online but the delivery makes it an expensive option.

I am in the West Midlands but would be willing to travel to Staffordshire, Shropshire, Worcestershire etc.

Have you asked a local butcher? Our local one in London seemed very happy to do this for me (and indeed gluten free with not too much pepper as for DD) - I was very glad and asked for 6 packs for the freezer.

M&S organic chipolattas don't have sodium nitrate either the last time I looked, if that's helpful.

I don't live in a very posh area so none of the local butchers do gluten free sausages cos there's no demand let alone nitrite free.

Our body does convert a small amount of sodium nitrate in vegetables to sodium nitrite. However sodium nitrite alone is not bad for us. When meat products containing sodium nitrite are heated they produce nitrosamines which can cause cancer and COPD. Vegetables contain antioxidants that reduce the formation of nitrosamines.

There's an organic butcher (proper old fashioned butchers) in Bournville, on Mary Vale Rd, Rossiters I think- maybe give them a ring?

Does HFW's recipe taste baconny? Just noticed it used pork chops and I have done a similar recipe with pork belly, salt, pepper, juniper berries and bay leaves before. It was nice, but didn't really have that bacon flavour tbh.

If you google HFW and bacon (Shock) there is another HFW bacon recipe but I haven't tried that. I guess this one's not very very bacony, but I found it was definitely tasty.
