I've made bean burgers a few times but they have been very bland. Does anyone have any veggie burger recipes that we coudl try? I'm fed up relying on processed ones. tia!

400g can kidney beans mashed

1/2 tsp ground coriander
1 slice of bread - made into crumbs

fry onion, celery and chilli in half the oil til soft
stir in spices and mashed beans with bread crumbs and egg to make most paste
heat remianing oil in frying pan. Spoon mixture into 2 burger shapes and fry 3 minutes on both sides.

I got this from a magazine and they are really nice - spent the whole summer last year tyrying to find a good one!

Boil about 1/4 pint water and put in it one chicken stock cube and a couple of tablespoons of dark soy sauce.
Let this cool and soak some Quorn mince in it.
Enough for the mince to be just covered by the stock.
Let it marinate, ideally overnight, or at least for a couple of hours.
Drain the Quorn from the stock and mix with,
1 finely diced onion.
1 small beaten egg.
2 heaped tsp cornmeal.
1 heaped tsp gram flour.
Salt & pepper to season.
The mix should be fairly dry.
Again it's best now to refrigerate for a nice firm mix, though you can shape and fry them at once.
They only take 3 or 4 minutes each side to cook.
Hope you like them.

BTW - If you wanted to not use eggs - either a few tbs of pureed tofu or, my favorite, some mashed potato works well as a binder.

My burgers tend to have kidney beans and butter beans, and sometimes chickpeas mashed roughly with mashed potato, sweetcorn, wilted spinach, cumin, smoked paprika and a teeny bit of marmite. Add some veg stock and a mix of soya mince and/ all breadcrumbs. Form in to patties and bake or fry.
Ketchup is obligatory.
