Artichoke & chicken - what shall I make?

I have some artichoke hearts in oil and some chicken breast.

I'm thinking a pasta sauce thing but how, what etc.
What would you make?

Artichokes and chicken...er..fried in artichokey oil....? Grin

Just bumping! Clueless, can't flipping get artichokes around here (never think of it when in ton!)

No risotti rice but yeah I could just fry off chicken in the oil, add the hearts and maybe add the lonely yellow pepper left in the veg drawer, grate over loads of fresh parmesan and serve on some linguine. Sounds ok to me. OK - thanks.

No - I was feeding Eve and trying to get Lottie upstairs to bed. Didn't succeed so off to try again! Then will come back, re-check in in-case you have thought of something else I nedd to add or do and then will start dinner. Smile

Reminded me that I have a jar of artichokes in darkest cupboard - so guess what I'm making tomorrow night lol( and have risotto rice Wink

DP is home and has taken over but it looks nice. Am sitting enjoying a glass of wine while I wait for it. Will let you know how it turned out.

M mmmmmmmmm, that rocked. It was proper yummy Smile

Fried chicken off in artichoke oil till browned.
Removed and kept warm.
Knob of butter and warmed through sliced artichole hearts and a red pepper (that I found a jar of, whole ones that have been skinned), chuck chicken back in, throw into linguine with loads of parmesan and b.pepper. Lovely.
