Leak and potato soup?

This Sunday I want to make a big batch of leak and potato soup for mine and husbands lunches next week.
I've seen recipes online but can't decide on one that's good.
Also do I add more ingredients than suggested to last 4 days next week.

Anyone got any good recipes?
Also can be recipes for chicken soup or vegetable soup if you have those aswell :)

I use roughly 1 medium potato to each medium sized leek and stock at its right dilution. Roughly 1 cube per leek.

I start by fairly finely slicing the leeks and putting them in a lidded pan with a few tablespoons water. Stir or shake every few minutes so they don't stick. When they're starting to wilt add the stock and potato, cook for 20- 30 mins, season. I serve with grated cheese and mini fresh bread rolls.

To liven it up on subsequent days some finely chopped crispy bacon bits stirred in go down well.

I do a chicken and veg soup four big portions is one medium carrot, 1 leek, 1 parsnip, 1/4 small swede, handfull of peas or beans, two tablespoons barley, two tablespoons small pasta, 1 heaped tablespoon flour, 1 chicken breast or two thighs (precooked and finely choped). 2 or 3 stock cubes 1.2l water

Finely chop all the veg. Swet the leeks, add the other veg, stock, flour and barley simmer for 20 mins. Add the pasta and chicken cook for a further 15 mins. Season and serve.

I don't blend this one.
