some ground ginger instead of fresh ginger in my lemon chicken?

I tend to use ground ginger for sweet, and fresh for savoury, but I once had a recipe for chicken in ginger beer, so I don't see why not. I'm sure it will taste fine, just maybe a bit different to the usual lemon chicken.

but use less - as the dried stuff tends to be more potent
