How early can I bake cupcakes

before the occasion?
I'm really busy this week but offered a while ago to do some cakes for DM for something's she's having at her house on Sunday. I'm still happy to do them but can I make the cakes as early as Thursday and ice them Saturday night rock n roll without them going too dry?

Have you got space to freeze them? I often freeze mine and take them out when I need them. I have even iced them frozen as they defrost really quickly. No one has said they don't taste the same.

I would say if you are going to make them in Thursday they will be dry by Saturday. You could freeze them though, defrost and ice on Saturday?

Ooh we need to do something similar.

How long in advance can you do them? Would the day before be ok? 2 days?

With freezing do you just put them in a freezer bag? How long do they take to defrost?

Thankyou! OUrs normally get eaten very quickly so don't normally need to worry!

Wrap tightly, cling film or foil and then bag them. They should be ok for up to a month.

Smaller cupcakes really won't take long to defrost. Mary berry freezes her lemon drizzle cake! And I made Bourbon biscuits the other day and the recipe said that the finished assembled (buttercream filling and all) biscuits freeze well! Who knew!
