I've just made a curry from scratch for supper. The receipe called for ghee, but I don't have the time to make it, so just used butter and oil. It looked great 10 minc ago, but now the sauce has split into the nice stuff, and an orange oil. It won't mix back in without looking curdled.
Should I try to soak it off with kitchen roll, wait until it cools then try to remix it, or just leave it. It looks really unappealing with the grease on top.
