Which is best for rough puff pastry, fan or convection? Also, if I cook the pastry tomorrow for assembly of a custard slice on Saturday should I leave it on the tray uncovered? Covered? or in an airtight container?

I do mine in the fan oven and all ok.

Dunno about leaving it over night.
