what to cook with cashews

I have quite a lot of cashews someone brought to a meeting last night - can I cook anything with them otherwise I am just going to scoff the lot

stir fry, I have a lovely james martin chicken stir fry recipe if you want it, infact i think its on bbc site, v v v v nice i should add

I love this recipe for Lemon Rice, which uses cashew nuts.(serves 2 people)
Heat 2tbns olive oil in a wok/large frying pan. Add 1 teaspoon cumin seeds (or ground cumin). When sizzling, add 1/2 onion (sliced) & zest of 1 lemon. Fry till onion is translucent.
Add 250g cooked & peeled prawns, 2 diced tomatoes, a handful of chopped coriander, 60g cashew nuts (the important part , 1 tsp chilli powder and a little salt. Fry for about 1 min.
Add 110g basmati rice (rinsed). Stir fry for further 30 seconds.
Add 125 ml water, bring to boil. Then turn heat down very low, cover and 'steam' for 15 mins.
Gently stir with a fork to separate rice grains. Then serve.
